Bobbie’s Paleo Banana Bread

If you are looking for a healthy treat that is so good, this is it!
Bobbie’s Paleo Banana Bread:
(adapted slightly from this Detoxinista recipe.)

This recipe is gluten free and paleo.  If you want a banana bread for those days you’re needing a healthy option, this is YUM!

INGREDIENTS:
4 very ripe bananas
3/4 cup coconut flour
5 eggs
1/3 cup coconut sugar plus 3 Tablespoons sprinkling on top
1 tsp cinnamon
1tsp baking soda
1/4 tsp salt
2 tablespoons vanilla
1/2 tsp almond extract
3/4 walnut pieces

INSTRUCTIONS:
1.  Preheat oven to 350 and use oil or cooking spray to coat a 9×5 pan.
2.  In a large bowl, mash the bananas.  Add in vanilla and almond extract, eggs, coconut flour, 1/3 cup coconut sugar, cinnamon, baking soda, and salt.  Wisk well until smooth.  Stir in walnuts.
3.  Pour batter into prepared pan.  Sprinkle the 3 Tablespoons of coconut sugar over the top.  Bake until the bread feels firm, about 30-35 minutes.  Check for doneness and bake longer if needed.
4.  Store in an airtight container in the fridge.
